New Shakshuka Sauce from Casablanca Foods at Kosherfest

It may be too early to crown a Best in Show winner for the new product that stands out amongst the hundreds of new products at Kosherfest but some of the new Moroccan products by Casablanca Foods are certain to turn many heads. Casablanca is known for its Mina brand of artisanal Moroccan food products, including Harissa, a key condiment of Moroccan cuisine. As a young girl, Mina managed the cooking for 10 younger siblings – artfully transforming her mother’s techniques with a naturally talented touch. At 16 she tasted her next-­door neighbor’s homemade Harissa and fell in love with this fiery red sauce. From a thick spreadable consistency Mina played with the recipe until she made it exactly hers. She added extra-­virgin olive oil, a touch of vinegar and some garlic to the red-­finger-long hot pepper base that gives the sauce its unique tangy‐hot flavor profile. Eventually she would trade the wild aromas of Morocco’s souks for Paris and its refined French cuisine; taking on training that would later prepare her to surprise some of the world’s most outspoken critics with deliciously diverse dishes. Finally she landed in New York where for years she served her authentic specialties as one of the city’s most creative private caterers. Now, the bold heritage of her famed dishes is a celebrated staple in the global cook’s pantry. And the brand, like the chef, continues its journey to make more meals more Moroccan.
